Cooking Mussels

Prepare the Mussels
Clean the mussels under cold running water, scrubbing the shells to remove any sand or debris. Remove the beards.

Add Tomatoes and Saffron
Add cherry tomatoes, saffron, salt, and pepper to the pot. Cook until the tomatoes begin to soften, about 3-4 minutes.

Add Wine and Mussels
Pour in the white wine and bring to a simmer. Add the cleaned mussels, cover the pot, and steam for about 5-7 minutes, or until the mussels have opened.

Finish and Garnish
Stir in chopped parsley and adjust seasoning if necessary. Discard any mussels that did not open.
Preparing Crostini

Slice Baguette
Slice the baguette into 1/2-inch thick slices.

Toast Crostini
Brush both sides of each slice with olive oil. Place on a baking sheet and toast in the oven at 400°F (200°C) for about 5-7 minutes, until golden.

Add Garlic
Rub the toasted crostini with a cut garlic clove for flavor.
