Prepare the Ravioli Dough

Make the Dough
In a large bowl, mix the flour and salt. Create a well in the center and add the eggs and olive oil. Gradually mix the flour into the eggs until a dough forms. Knead for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
Prepare the Rabbit Filling

Mix the Filling
In a bowl, combine ground rabbit, ricotta cheese, parsley, garlic, salt, and pepper. Mix well until fully combined.
Make the Carrot and Parsnip Purée

Prepare the Brioche Crumble

Bake the Crumble
Preheat oven to 350°F (175°C). In a bowl, mix brioche, Parmesan, olive oil, and salt. Spread on a baking sheet and bake for 10-15 minutes until golden brown, stirring occasionally.
Assemble and Cook the Ravioli

Form Ravioli
Roll out the dough thinly. Cut into squares, place a spoonful of rabbit filling in the center of each square, and fold over to create ravioli. Seal the edges with water.

Cook Ravioli
Bring a large pot of salted water to boil. Cook ravioli for 3-4 minutes until they float. Remove and drain.
Plate the Dish

Serve
On a plate, spread the carrot and parsnip purée, place the ravioli on top, sprinkle with brioche crumble, and add salami slices. Enjoy!
