Brewing Process

    Mashing

    Heat 16 cups of water to 160°F (71°C) and add the pale malt and caramel malt. Maintain the temperature for 60 minutes.

    Sparging

    After mashing, sparge the grains with hot water to collect the wort, aiming for about 6-7 cups of wort.

    Boiling

    Bring the wort to a boil. Add the hops and boil for 60 minutes.

    Cooling

    Cool the wort quickly to about 70°F (21°C) using a wort chiller.

    Fermentation

    Transfer the wort to a fermentation vessel and pitch the yeast. Seal and let it ferment for about 2 weeks at a temperature of 50°F (10°C).

    Bottling

    After fermentation, transfer the beer to bottles, adding priming sugar to carbonate. Seal and let it condition for about 2 weeks.
