Making the Soup

    Sauté the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until the onions are caramelized, about 25-30 minutes.

    Add Garlic and Herbs

    Stir in the minced garlic, dried thyme, and bay leaf. Cook for another 2-3 minutes until fragrant.

    Deglaze and Simmer

    Pour in the white wine to deglaze the pot, scraping up any browned bits. Add the beef broth and bring to a boil. Reduce heat and let it simmer for 30 minutes. Season with salt and black pepper to taste.

Preparing Brioche Crostini

    Toast the Brioche

    Preheat the oven to 400°F (200°C). Arrange the brioche slices on a baking sheet, brush with olive oil, and sprinkle with garlic powder. Bake for about 10-12 minutes, or until golden and crisp.

Serving

    Ladle the soup into bowls, top with a generous amount of shredded gruyère cheese, and place 1-2 brioche crostini on top. You can broil the soup for a few minutes to melt the cheese if desired. Serve hot.
