Preparation of Prime Rib

    Sear the Prime Rib

    Preheat your oven to 450°F (230°C). Season the prime rib with salt and pepper. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the prime rib on all sides until browned, about 5-7 minutes.

    Roast the Prime Rib

    Transfer the skillet to the preheated oven and roast for about 20-25 minutes for medium-rare, or until it reaches an internal temperature of 135°F (57°C). Remove from the oven and let it rest for 15 minutes before slicing.

Caramelizing Onions

    Cook the Onions

    While the prime rib is resting, thinly slice the onions. In a separate pan, add 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 20-30 minutes.

Making Horseradish Crème Fraîche

    Mix Ingredients

    In a small bowl, combine the horseradish and crème fraîche. Mix well and season with salt and pepper to taste.

Preparing the Au Jus

    Prepare the Au Jus

    In a small saucepan, heat the beef broth over medium heat until it simmers. Scrape the bottom of the pan used for the prime rib to deglaze and add the juices to the broth. Let it simmer for a few minutes.

Assembling the French Dip

    Slice and Serve

    Slice the prime rib thinly. Cut the baguette in half lengthwise and fill with slices of prime rib, caramelized onions, and gruyere cheese. Place under the broiler until the cheese is melted and bubbly. Serve with a side of au jus for dipping and a dollop of horseradish crème fraîche on the side.
