Prepare the Baked Brie

Bake the Brie
Preheat the oven to 350°F (175°C). Place the Brie cheese on a baking sheet lined with parchment paper. Drizzle honey over it and sprinkle with chopped pecans and fresh thyme. Bake for 15-20 minutes until the cheese is melted and bubbly.
Make the Fennel Apple Pecan Slaw

Combine Slaw Ingredients
In a large bowl, combine the thinly sliced fennel, julienned apple, chopped pecans, lemon juice, olive oil, salt, and black pepper. Toss well to combine and set aside.
Prepare the Wholegrain Mustard Aioli

Mix the Aioli
In a small bowl, combine mayonnaise, wholegrain mustard, minced garlic, lemon juice, and salt. Whisk until smooth and well combined.
Assemble the Salad

Prepare the Mâche Salad
In a large bowl, toss mâche greens with olive oil, balsamic vinegar, salt, and black pepper until evenly coated.

Plate the Dish
On a serving platter, place the baked Brie in the center. Surround it with the fennel apple pecan slaw and mâche salad. Serve with the wholegrain mustard aioli on the side.
