Method

Fries Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into evenly sized fries, about 1/4 inch thick.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.

    Fry the Potatoes

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches for 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Cream Sauce Preparation

    Make the Roux

    In a saucepan, melt the unsalted butter over medium heat. Once melted, whisk in the flour until smooth and cook for 2-3 minutes until it turns a light golden color.

    Add Cream

    Slowly whisk in the heavy cream, ensuring there are no lumps. Continue to stir until the sauce thickens, about 5 minutes.

    Season and Combine

    Stir in the Old Bay seasoning, crawfish tails, and smoked shrimp. Cook for an additional 3-4 minutes until the seafood is heated through.

    Add Cheese

    Remove from heat and stir in the shredded cheddar and grated parmesan until melted and smooth.

Assembly

    Serve the Fries

    Place the hot fries on a serving platter and generously drizzle the Old Bay cream sauce over them. Optionally, garnish with additional shrimp or crawfish and extra cheese before serving.
