Pork Preparation

Season the Pork
Rub the pork shoulder with salt, black pepper, garlic powder, and onion powder evenly over the surface.

Fry the Pork
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the seasoned pork shoulder and fry until golden brown on all sides, about 15-20 minutes.

Cook Through
Reduce the heat to medium-low, cover the skillet, and let the pork cook for another 40-50 minutes, or until it is tender and fully cooked. Remove from heat and let it rest for 10 minutes before slicing.
Siracha Slaw Preparation

Mix the Slaw Ingredients
In a large bowl, combine the shredded cabbage, grated carrot, mayonnaise, sriracha sauce, rice vinegar, sugar, and salt. Mix well until all ingredients are combined.

Chill the Slaw
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.

Assembling the Sandwich

Slice the Pork
After the pork has rested, slice it thinly against the grain.

Slice the sandwich rolls in half. Spread a layer of spicy Thai sweet chili sauce on the bottom half, add the sliced pork, top with the siracha slaw, pickled vegetables, and chopped cilantro. Drizzle with more sweet chili sauce if desired. Place the top half of the roll on the sandwich.
