Ribeye Steak

    Prepare the Steak

    Remove the ribeye steak from the refrigerator and let it come to room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

    Cook the Steak

    In a skillet or grill pan, heat olive oil over medium-high heat. Add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached. Remove from heat and let it rest for 5 minutes.

Whiskey Butter

    Prepare the Whiskey Butter

    In a small bowl, combine softened unsalted butter, whiskey, minced garlic, and chopped parsley. Mix well until all ingredients are fully incorporated. Set aside.

Garlic Cheddar Mashed Potatoes

    Cook the Potatoes

    In a large pot, cover the diced potatoes with water and add a pinch of salt. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add minced garlic, heavy cream, shredded cheddar cheese, butter, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.

Hatch Green Chili Creamed Corn

    Cook the Corn

    In a medium saucepan, melt butter over medium heat. Add fresh corn kernels and sauté for 3-4 minutes until tender.

    Add Cream and Chiles

    Stir in diced Hatch green chiles, heavy cream, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally, until the mixture thickens slightly.
