Preparation

    Prepare the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Flip occasionally for even cooking. Once cooked, remove from skillet and drain on paper towels.

    Prepare the Jalapeño

    If not already roasted, roast the jalapeño over an open flame or in a broiler until the skin is charred. Let it cool, then remove the skin, seeds, and slice it into thin rings.

Assembly

    Spread the Peanut Butter and Fig Spread

    Take one slice of bread and spread the peanut butter evenly over it. On the other slice, spread the fig spread evenly.

    Add Cheddar and Bacon

    Layer the cheddar cheese slices on top of the peanut butter and add the crispy bacon slices on top of the cheddar.

    Add Roasted Jalapeño

    Place the sliced roasted jalapeño on top of the bacon layer.

    Finish the Sandwich

    Top with the second slice of bread with fig spread facing down. Press gently to combine all ingredients.

Cooking

    Toast the Sandwich

    In the same skillet used for bacon, add a little butter or oil over medium heat. Place the sandwich in the skillet and toast for about 3-4 minutes on each side until the bread is golden brown and the cheese begins to melt.
