Prepare the Brussel Sprouts
Preheat your oven to 400°F (200°C). Rinse the Brussel sprouts under cold water, remove the outer leaves, and trim the stem ends. Cut each sprout in half lengthwise.

Chop the Jalapeño
Slice the jalapeño in half, remove the seeds (for less heat), and finely chop it.

Toss and Roast the Sprouts
In a large bowl, combine the halved Brussel sprouts with olive oil, salt, and black pepper. Toss until evenly coated. Spread the sprouts on a baking sheet in a single layer.

Add Jalapeño and Bake
Sprinkle the chopped jalapeño over the Brussel sprouts. Bake in the preheated oven for 20-25 minutes or until the sprouts are golden brown and crispy, flipping halfway through the cooking time.

Finish with Bacon and Cotija
Remove the baking sheet from the oven. Sprinkle the chopped bacon and cotija cheese over the crispy Brussel sprouts. Serve warm.
