Cajun Pork Tenderloins

Prepare the Pork
Preheat your smoker to 225°F (107°C).

Season the Pork
Rub the pork tenderloins with olive oil and then coat them evenly with Cajun seasoning, smoked paprika, salt, and black pepper.

Smoke the Pork
Place the seasoned pork tenderloins in the smoker and cook for 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C).

Rest the Pork
Once done, remove the pork from the smoker and let it rest for 10 minutes before slicing.

Add Cream and Seasoning
Pour in the heavy cream and season with salt and black pepper. Stir well and let it simmer for 10 minutes, until thickened.

Garnish
Remove from heat, and garnish with chopped chives before serving.

Sauté Garlic
In a small saucepan, melt butter and sauté minced garlic until fragrant, about 1-2 minutes.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add sautéed garlic, heavy cream, salt, and black pepper. Mash until smooth and creamy.
Zesty Lime Infused Steak Sauce

Mix the Sauce
In a bowl, combine lime juice, soy sauce, Worcestershire sauce, honey, garlic powder, onion powder, and red pepper flakes. Mix well.

Serve the steak sauce alongside the smoked pork tenderloins.
