Method
Prepare Pork Chops

Season the Pork Chops
Pat the bone-in pork chops dry with paper towels. Season both sides generously with salt and black pepper.

Cook the Pork Chops
In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes per side, or until they reach an internal temperature of 145°F. Remove from the skillet and let rest.

Add Sauces and Cream
Stir in the Dijon mustard and Worcestershire sauce. Pour in the heavy cream and bring the mixture to a simmer. Cook for another 5 minutes until the sauce thickens slightly. Stir in the chopped chives before serving.
Prepare Crispy Onions

Soak and Coat the Onions
Soak the thinly sliced onion in buttermilk for at least 30 minutes. Then, dredge the soaked onions in flour until coated evenly.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
