Method
Preparing Bacon Marmalade

Cook the Bacon
In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

Combine Ingredients
Add the cooked bacon, brown sugar, apple cider vinegar, black pepper, and salt to the skillet. Stir to combine.

Simmer
Let the mixture simmer over low heat for about 15-20 minutes, until it thickens to a jam-like consistency. Stir occasionally.

Cool and Blend
Remove from heat and cool slightly. Use an immersion blender or regular blender to blend until smooth, if desired.
Making Jalapeño Aioli

Combine Ingredients
In a bowl, combine mayonnaise, finely chopped jalapeño, lime juice, minced garlic, and salt. Mix well.

Taste and Adjust
Taste the aioli and adjust seasoning with more salt or lime juice as needed. Set aside.
Cooking the Steak

Season the Filet
Season the petit filets with salt and black pepper on both sides.

Add Provolone
During the last minute of cooking, place a slice of provolone cheese on each steak and cover to melt.
