Bacon Marmalade

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove and drain on paper towels, leaving some fat in the skillet.

    Sauté the Onion

    In the same skillet with the bacon fat, add the chopped onion and sauté until translucent, about 5 minutes.

    Combine Ingredients

    Chop the cooked bacon and add it back to the skillet with the onion. Stir in the brown sugar, apple cider vinegar, black pepper, and maple syrup.

    Simmer

    Reduce heat to low and let the mixture simmer for about 30 minutes, stirring occasionally, until it thickens and caramelizes.

    Blend

    Let the mixture cool slightly, then transfer to a food processor and blend until smooth but still slightly chunky.

Jalapeño Aioli

    Prepare the Jalapeño

    Remove the seeds from the jalapeño and finely chop it.

    Mix the Aioli

    In a bowl, combine the mayonnaise, chopped jalapeño, minced garlic, lemon juice, and salt. Mix well until smooth.

Assembly

    Layer the Ingredients

    On a serving platter, layer provolone cheese, followed by the bacon marmalade, a handful of arugula, and a drizzle of jalapeño aioli on top.

    Serve

    Serve immediately as a delicious appetizer or a gourmet addition to sandwiches.
