    Prepare the Short Rib Filling

    In a large pot, sear the short ribs on all sides until browned. Remove and set aside.

    In the same pot, add chopped onion and minced garlic. Sauté until translucent. Return short ribs to the pot, add beef broth, rosemary, salt, and black pepper. Bring to a simmer.

    Cover and cook on low heat for 2-3 hours until the meat is tender. Once cooked, shred the meat and set aside to cool.

    Make the Ravioli Dough

    In a bowl, combine flour and salt. Create a well in the center and add eggs and olive oil. Mix until a dough forms.

    Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Assemble the Ravioli

    Roll out the dough into thin sheets. Place small spoonfuls of the short rib filling on one sheet, leaving space in between.

    Cover with another sheet of dough, press down around the filling to seal, and cut out shapes using a ravioli cutter.

    In a skillet, melt butter over medium heat until it turns golden brown. Add sage leaves and cook until crispy.
