    Prepare the Wild Rice

    Rinse the wild rice under cold water. In a medium saucepan, combine the wild rice with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low and simmer, covered, for about 45 minutes or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

    Cook the Protein

    If using steak, season with salt and pepper, then grill or pan-sear to desired doneness. For shrimp, sauté in a skillet over medium heat until pink and cooked through. For chicken, grill or sauté until fully cooked. Slice the protein into bite-sized pieces and set aside.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of oil over medium heat. Add the sliced bell peppers and mushrooms, cooking until they are tender, about 5-7 minutes.

    Combine Ingredients

    Add the cooked wild rice, protein, chopped pecans, and Thai peanut sauce to the skillet with the vegetables. Stir well to combine and heat through for about 3-5 minutes.

    Divide the Thai peanut mixture among plates. Garnish with additional chopped pecans if desired, and enjoy!
