Prepare the Filling
In a mixing bowl, combine ground chicken, finely chopped lemongrass, minced garlic, grated ginger, chopped green onions, soy sauce, and sesame oil. Mix well until all ingredients are incorporated.

Fill the Potstickers
Place a wonton wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges of the wrapper with water, fold it in half to create a half-moon shape, and press the edges to seal. Repeat with the remaining wrappers and filling.

Cook the Potstickers
Heat vegetable oil in a large skillet over medium-high heat. Place the potstickers in the skillet, flat side down, and cook for about 2-3 minutes until the bottoms are golden brown.

Steam the Potstickers
Add 1/4 cup of water to the skillet, cover with a lid, and let the potstickers steam for about 5-7 minutes until cooked through. Remove the lid and let any remaining water evaporate.

Serve
Serve the potstickers warm with your choice of honey ginger sauce for dipping.
