    In a skillet over medium heat, add a splash of vegetable oil. Season the diced chicken breast with salt and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. Remove from heat.

    Fry Wonton Strips

    In a separate frying pan, heat vegetable oil over medium-high heat. Cut wonton wrappers into strips and fry until golden brown and crispy, about 2-3 minutes. Drain on paper towels.

    In a serving platter, arrange the lettuce leaves. Top each leaf with cooked chicken, roasted red peppers, scallions, a drizzle of soy sauce, sriracha, and a spoonful of peanut sauce.

    Finally, sprinkle the fried wonton strips on top for added crunch.
