Prepare the Steak
Heat the olive oil in a skillet over medium-high heat. Season the ribeye steak with salt and black pepper. Once the oil is hot, add the steak and sear for about 4-5 minutes on each side for medium rare, or until desired doneness. Remove from skillet and let it rest for 5 minutes before slicing.

Prepare the Peppers
While the steak is resting, slice the cherry peppers. If you prefer them milder, you can remove some of the seeds.

Assemble the Hoagie
Slice the hoagie rolls in half lengthwise. Spread a generous amount of horsey sauce on both sides of the rolls. Layer the sliced steak, cherry peppers, and provolone cheese on the bottom half of the roll. Close the hoagie and press down slightly.

Toast the Hoagie
Preheat the oven to 375°F (190°C). Place the assembled hoagies on a baking sheet and toast in the oven for about 5-7 minutes, or until the cheese is melted and the bread is lightly crispy.

Serve
Remove from the oven, slice in half if desired, and serve hot. Enjoy your Horsey Hoagie!
