Instructions for Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until it is completely melted and hot, but not boiling.

    Whisk the Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is pale and thick.

    Combine and Cook

    Place the bowl over a pot of simmering water (double boiler method). Continuously whisk the egg yolk mixture while slowly adding the melted butter in a thin stream until the sauce thickens and emulsifies.

    Season the Sauce

    Once the hollandaise is thick and creamy, remove it from the heat and stir in salt and cayenne pepper to taste.

    Serve

    Serve the hollandaise sauce warm as a side for eggs benedict, vegetables, or other dishes.
