Preparation Steps

  1. 1

    Prepare the Honey Lemon Vinaigrette

In a small bowl, whisk together honey, lemon juice, olive oil, salt, and black pepper until well combined. Set aside.

  2. 2

    Prepare the Salmon

Preheat the oven to 400°F (200°C). Place the salmon fillet on a baking sheet lined with parchment paper. Sprinkle the grated asiago cheese evenly over the top of the salmon.

  3. 3

    Bake the Salmon

Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the cheese is golden brown.

  4. 4

    Assemble the Salad

In a large bowl, combine fresh spinach, green olives, sun-dried tomatoes, and diced cucumber. Drizzle with the honey lemon vinaigrette and toss gently to combine.

  5. 5

    Serve

Once the salmon is done baking, remove from the oven and let rest for a few minutes. Serve the salmon fillet on a plate alongside the prepared salad.
