    Prepare the Oven

    Preheat your oven to 220°C (428°F).

    Mix the Batter

    In a large mixing bowl, beat together the cream cheese and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition.

    Add Remaining Ingredients

    Mix in the heavy cream, vanilla extract, and salt until fully incorporated and smooth.

    Bake the Cheesecake

    Pour the cheesecake batter into a greased 9-inch round cake pan. Bake in the preheated oven for 25-30 minutes, until the top is caramelized and the center is still slightly jiggly.

    Cool the Cheesecake

    Remove the cheesecake from the oven and let it cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours before serving.

    Prepare the Topping

    In a small saucepan, combine the Luxardo cherries and brandy. Heat gently until warmed through.

    Slice the cheesecake and serve topped with the warm Luxardo cherries and drizzle with extra brandy if desired.

    For an additional caramelized effect, sprinkle turbinado sugar on top of the cheesecake and use a kitchen torch to caramelize before serving.
