Prepare the Rice
In a medium saucepan, bring 4 cups of water to a boil. Add the jasmine rice and a pinch of salt. Reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.

Make the Sauce
In the same skillet, add diced tomatoes, green olives, capers, honey, and lemon juice. Stir well and let it simmer for about 5-7 minutes until the tomatoes are softened and the sauce thickens slightly.

Combine and Serve
Return the cooked chicken to the skillet, spoon the sauce over the chicken, and cook for an additional 2-3 minutes to heat through. Serve the chicken Vera Cruz over a bed of jasmine rice, garnished with chopped green onions.
