In a bowl, combine diced tomatoes, onions, bell peppers, and pesto. Mix well and set aside.

In a skillet over medium heat, cook the hashbrowns until golden brown and crispy. Season with salt and pepper. Keep warm.

In a large bowl, whisk together the eggs, salt, and pepper. Heat a non-stick skillet over medium heat and pour in the egg mixture. Once the eggs start to set, add the diced ham, crumbled bacon, bruschetta mix, and shredded cheese on one half of the omelet.

Carefully fold the omelet in half and cook for an additional 2-3 minutes until the cheese melts and the omelet is fully cooked.
