    Prepare the Ingredients

    Dice the smoked brisket, bell peppers, onions, and slice the mushrooms. Set aside.

    Sauté the Vegetables

    In a non-stick skillet, heat olive oil or butter over medium heat. Add the diced onions, bell peppers, and mushrooms. Sauté for about 5 minutes or until softened.

    Mix the Eggs

    In a bowl, whisk together the eggs, salt, and black pepper until well combined.

    Cook the Omelet

    Pour the egg mixture into the skillet with the sautéed vegetables. Reduce the heat to low. Cook for about 3-4 minutes until the eggs start to set around the edges.

    Add the Brisket and Cheese

    Sprinkle the smoked brisket and shredded cheese evenly over one half of the omelet. Cover the skillet with a lid and cook for an additional 2-3 minutes until the cheese melts and the eggs are fully set.

    Gently fold the omelet in half and slide it onto a plate. Serve warm with hashbrowns and toast.
