Cooking Instructions
- 1
Prepare the Wild Rice
Rinse the wild rice under cold water. In a medium saucepan, combine the wild rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes, or until the rice is tender. Remove from heat and let it sit covered for 10 minutes.
- 2
Make the Bourbon Glaze
In a small saucepan, combine the bourbon, honey, soy sauce, minced garlic, and black pepper. Bring to a simmer over medium heat and let it reduce by half, stirring occasionally, about 10-15 minutes.
- 3
Cook the Salmon
In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillets with salt and pepper. Sear the salmon skin-side down for about 4-5 minutes, then flip and cook for another 3-4 minutes or until cooked through. Brush the bourbon glaze over the salmon during the last minute of cooking.

Serve
Fluff the wild rice with a fork and divide it among four plates. Place a salmon fillet on top of each bed of rice and drizzle with additional bourbon glaze. Garnish with chopped parsley.
