    Chill glass

    Place a martini or coupe glass in the freezer for at least 5 minutes, or fill with ice water while you prepare the cocktail.

    Combine ingredients

    Add vodka, amaretto, pistachio orgeat, heavy cream, and ice cubes to a cocktail shaker.

    Shake

    Seal the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is very cold and the cream is slightly aerated and frothy.

    Prepare glass

    If you used ice water to chill, empty and dry the glass. Optionally, wet the rim lightly with a little orgeat or simple syrup and dip into the chopped pistachios to rim part of the glass.

    Strain

    Double-strain the cocktail into the chilled martini or coupe glass using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any pistachio bits.

Garnish

    Sprinkle the finely chopped pistachios over the surface of the cocktail and finish with one whole or halved pistachio on the rim or float in the center.
