Prepare honey syrup
If you don't have honey syrup ready, combine 2 parts honey with 1 part warm water (for example 2 tablespoons honey + 1 tablespoon warm water). Stir until fully dissolved and cool to room temperature before using.

Add the gin, Averna (or chosen amaro), fresh lemon juice, honey syrup, Green Chartreuse, and orange bitters into a cocktail shaker.

Fill the shaker with ice (enough to come near the top) and cap it. Shake vigorously for 12–15 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly diluted.

Dump the ice or water from your chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora glass using a Hawthorne strainer and, optionally, a fine mesh strainer to catch ice shards and pulp for a silkier texture.
