    Prepare glass

    Chill an old-fashioned (rocks) glass by filling it with ice and set aside while you mix the cocktail.

    Combine ingredients

    In a mixing glass or cocktail shaker (without shaking), add the Amaro Montenegro (or Averna), sweet vermouth, dry gin, orange curaçao, and Angostura bitters.

    Add ice and stir

    Fill the mixing glass with plenty of ice (about 1 cup). Stir gently with a bar spoon for 30–45 seconds (about 20–30 revolutions) until the mixture is well chilled and slightly diluted. The outside of the mixing glass should feel noticeably cold.

    Prepare serving glass

    Discard the ice from the chilled old-fashioned glass. Place a large ice cube or sphere into the glass.

    Strain and garnish

    Using a julep or Hawthorne strainer, strain the chilled cocktail into the prepared serving glass over the large ice cube. Express the oils from the orange peel over the drink by holding the peel skin-side down above the cocktail and giving it a firm squeeze to spray oils across the surface, then run the peel around the rim and drop it into the glass as garnish.

    Serve immediately and enjoy. Sip slowly to appreciate the balance of herbal amaro, sweet vermouth, citrus lift from curaçao and bitters.
