Ginger-Honey Syrup Preparation

Make syrup
Combine the water and honey in a small saucepan and warm over medium heat, stirring until the honey dissolves. Add the sliced ginger, bring to a gentle simmer, then reduce heat and simmer for 5 minutes to infuse. Remove from heat and let steep 20 minutes for stronger ginger flavor. Strain out the ginger and cool. This yields about 6 ounces; store refrigerated and use within 2 weeks.
Cocktail Assembly

Fill a cocktail shaker with ice.

Add 2 oz Pathfinder whiskey, 0.75 oz fresh lemon juice, and 0.75 oz ginger-honey syrup to the shaker.

Shake vigorously for 10–12 seconds until well chilled and slightly frothy.

Fill a highball or Collins glass with ice (or serve in a rocks glass with a large ice cube if you prefer).

Strain the shaken mixture into the prepared glass.

Top with 2 oz club soda and gently stir once to combine.

Garnish with a lemon wheel and a piece of candied or thinly sliced fresh ginger on the rim.
