    Prepare Ingredients

    If using vanilla simple syrup and you don't have it ready: combine equal parts sugar and water, heat gently to dissolve sugar, remove from heat and add a split vanilla bean or 1 tsp vanilla extract; cool before using. If using egg white, separate and measure 1/2 oz (about 1 tbsp). Have banana liqueur or syrup chilled.

    Dry Shake (if using egg white)

    In a cocktail shaker, add 2 oz bourbon, 1/2 oz banana liqueur, 1/2 oz vanilla simple syrup, 1/2 oz fresh lemon juice, 1/2 oz egg white (optional), and 2 dashes black walnut bitters plus 1 dash Angostura (if using). Dry shake (no ice) vigorously for 15–20 seconds to build a frothy texture.

    Wet Shake

    Add a large handful of ice to the shaker and shake hard for 12–15 seconds until well chilled and slightly diluted.

    Strain

    Double-strain the cocktail into a chilled coupe or rocks glass (double strain if you used egg white or to remove tiny ice shards) or over a large ice cube in a rocks glass if you prefer it on the rocks.

Garnish & Finish

    Sprinkle the finely chopped black walnut pieces (about 1 tsp) on top of the foam or gently onto the drink surface. Add a thin banana slice on the rim or float it on the foam. Finish with a light dusting of grated nutmeg or a scrape of vanilla bean if desired.

    Serve immediately. Optionally provide a small spoon to scoop the walnut bits as you sip.
