Make the Cheese Sauce
In a saucepan over medium heat, melt the unsalted butter. Add the all-purpose flour and whisk for 1-2 minutes until lightly golden. Gradually whisk in the heavy cream, stirring constantly. Once the mixture thickens, reduce the heat to low and add the smoked gouda cheese, garlic powder, salt, and black pepper. Stir until the cheese is fully melted and the sauce is smooth.

Grill the Sandwich
Lay out the slices of sourdough bread. On two slices, layer the sliced steak, caramelized onions, and smoked gouda cheese sauce. Top with the remaining slices of sourdough bread. Butter the outsides of the sandwiches. Grill in a skillet or panini press over medium heat for about 3-4 minutes on each side until the bread is golden brown and crispy.
