Method

Braised Beef Trimmings

  1. 1

    Prepare Beef Trimmings

In a large pot, combine the beef trimmings, beef broth, bay leaves, salt, black pepper, chopped onion, and minced garlic. Bring to a boil over medium-high heat.

  2. 2

    Braised Beef

Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 2 hours until the beef is tender.

  3. 3

    Shred Beef

After 2 hours, remove the beef from the pot, shred it using two forks, and set aside. Strain the broth to remove solids.

Brown Pan Gravy

  1. 4

    Make Roux

In a saucepan, melt the butter over medium heat. Add the all-purpose flour and whisk continuously for about 2 minutes to create a roux.

  2. 5

    Prepare Gravy

Gradually add the strained beef broth while whisking to prevent lumps. Stir in soy sauce and black pepper, and simmer until thickened, about 5-7 minutes.

Fries

  1. 6

    Prepare Fries

Cook the frozen French fries according to package instructions until crispy and golden brown.

Assembly

  1. 7

    Assemble Debris Fries

Once the fries are cooked, place them on a serving platter. Top with the shredded beef, pour over the brown gravy, and sprinkle the cheese blend on top.

  2. 8

    Melt Cheese

Place the platter under the broiler for 2-3 minutes or until the cheese is melted and bubbly.

  3. 9

    Garnish

Remove from the oven and garnish with chopped green onions before serving.
