Chicken Preparation

    Marinate the Chicken

    In a large bowl, combine the buttermilk, salt, black pepper, and cayenne pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Coating

    In a shallow dish, mix together the all-purpose flour and cornstarch. Set aside.

    Fry the Chicken

    In a large skillet, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade and allow excess buttermilk to drip off. Dredge the chicken in the flour mixture, coating thoroughly. Carefully add the chicken to the hot oil and fry for about 6-7 minutes per side or until golden brown and cooked through. Drain on paper towels.

    Toast the Pecans

    In a dry skillet over medium heat, toast the pecan halves for about 5 minutes, stirring frequently until fragrant. Remove from heat and set aside.

    Make the Sauce

    In a saucepan, combine honey, hot sauce, butter, garlic powder, and salt. Cook over medium heat, stirring until the butter melts and the mixture is well combined. Add the toasted pecans and stir to coat them in the sauce.

Roasted Garlic Mash Preparation

    Roast the Garlic

    Preheat the oven to 400°F (200°C). Cut the tops off the garlic cloves, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Allow to cool, then squeeze the garlic out of the skins.

    While the garlic is roasting, peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain.

    In a large bowl, combine the boiled potatoes, roasted garlic, butter, milk, salt, and black pepper. Mash until smooth and creamy.
