    Chill the Glass

    Begin by chilling an old-fashioned glass. Fill it with ice water and set it aside.

    Muddle the Sugar

    In a separate mixing glass, place the sugar cube and add a couple dashes of Peychaud’s bitters. Muddle them together until the sugar is mostly dissolved.

    Add Rye Whiskey

    Pour 2 oz of rye whiskey into the mixing glass with the muddled sugar and bitters. Fill the mixing glass with ice.

    Stir the Mixture

    Stir the mixture for about 20-30 seconds until well chilled and properly diluted.

    Prepare the Glass

    Discard the ice water from the chilled old-fashioned glass. Add 1 tsp of Pernod to the glass and swirl it around to coat the inside.

    Strain and Serve

    Strain the chilled mixture into the prepared glass. Optionally, you can garnish it with a lemon twist by expressing the oils over the drink and placing it in the glass.
