    Rinse the rice under cold water until the water runs clear. Dice the chicken breast into bite-sized pieces. Chop the carrots, bell pepper, and onion into small cubes. Mince the garlic.

    In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add the rinsed rice, reduce heat to low, and cover. Cook for about 15-20 minutes, or until the rice is tender and has absorbed the broth.
