Preheat your oven to 400°F (200°C). Peel the garlic cloves and place them on a piece of aluminum foil. Drizzle with 1 tablespoon of olive oil and wrap tightly in the foil. Place in the oven and roast for about 30 minutes until soft and fragrant.

While the garlic is roasting, rinse the fresh spinach under cold water to remove any dirt or grit. Drain well and set aside.
