Red Beans & Rice

Prepare the Red Beans
Rinse the dried red beans under cold water. In a large pot, combine beans with 4 cups of water. Bring to a boil, then reduce heat and simmer for about 1-1.5 hours or until beans are tender.

Combine Ingredients
Once the beans are tender, add the sautéed vegetables, bay leaf, thyme, salt, and black pepper to the pot. Stir well and cook for an additional 20 minutes.

Serve with Rice
Serve the red bean mixture over cooked rice.
Fried Chicken

Marinate the Chicken
Place chicken breasts in a bowl and cover with buttermilk. Let it marinate in the refrigerator for at least 1 hour, preferably overnight.

Prepare the Coating
In a shallow dish, combine flour, paprika, salt, and black pepper. Mix well.

Fry the Chicken
Heat oil in a large skillet over medium-high heat. Remove chicken from buttermilk, allowing excess to drip off, and dredge in the flour mixture. Fry chicken in hot oil for about 6-8 minutes per side or until golden brown and cooked through.

Drain and Keep Warm
Remove fried chicken from oil and place on paper towels to drain excess oil. Keep warm until ready to serve.

Preheat the Oven
Preheat your oven to 400°F (200°C).

Mix Dry Ingredients
In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt. Mix well.

Combine and Bake
Pour the wet ingredients into the dry ingredients and stir until just combined. Pour the batter into a greased baking dish and bake for 20-25 minutes or until golden brown.

Serve Warm
Let the cornbread cool slightly before serving warm with the red beans and fried chicken.
