Preparation of Fritters

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and pepper. Whisk together until well combined.

Incorporate Pimento Cheese
Gently fold in the pimento cheese until evenly distributed throughout the batter.
Frying the Fritters

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the temperature by dropping a small bit of batter into the oil; it should sizzle immediately.

Fry the Fritters
Using a tablespoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan. Fry in batches for about 3-4 minutes on each side or until golden brown and crispy.

Drain and Cool
Once cooked, remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil. Allow them to cool slightly before serving.
Serving

Arrange the fritters on a serving platter and serve warm with a jar of red pepper jelly on the side for dipping.
