Preparing the Pimento Cheese Spread

Grate the Cheese
Using a box grater or food processor, grate the sharp cheddar cheese into a mixing bowl.

Mix the Spread
Add the cream cheese, drained pimentos, mayonnaise, garlic powder, onion powder, salt, black pepper, and hot sauce to the bowl with the grated cheese. Mix everything together until smooth and well combined.

Taste and Adjust
Taste the pimento cheese spread and adjust seasoning if necessary, adding more salt, pepper, or hot sauce to your preference.
Assembling the Sandwich

Toast the Bread
In a skillet or griddle over medium heat, melt 1 tablespoon of butter. Place 4 slices of sourdough bread in the skillet and toast until golden brown, about 2-3 minutes per side. Repeat with the remaining 4 slices.

Spread the Pimento Cheese
Once the bread is toasted, spread a generous amount of the pimento cheese spread on the unbuttered side of 4 slices.

Add Optional Ingredients
If desired, layer fresh spinach and sliced tomatoes on top of the pimento cheese on each of the 4 slices.

Complete the Sandwich
Top each slice with another piece of toasted sourdough bread, buttered side facing out, to form a sandwich.

Serve
Remove the sandwiches from the skillet, slice in half if desired, and serve warm.
