Method

Steak Preparation

  1. 1

    Season the Steak

Pat the New York strip steaks dry with paper towels. Generously season both sides with salt and black pepper. Allow the steaks to sit at room temperature for 30 minutes to enhance flavor.

  2. 2

    Preheat the Grill/Pan

If using a grill, preheat it to high heat. If cooking on a stovetop, place a cast-iron skillet over medium-high heat and add 2 tablespoons of olive oil.

Cooking the Steak

  1. 3

    Cook the Steak

Once the grill or skillet is hot, add the seasoned steaks. Cook for 4-5 minutes on one side without moving them to get a good sear.

  2. 4

    Flip and Add Flavor

Flip the steaks and add butter, garlic cloves (smashed), and fresh rosemary to the pan. Cook for an additional 4-5 minutes for medium-rare, basting the steaks with the melted butter and aromatics.

  3. 5

    Check for Doneness

Use a meat thermometer to check the internal temperature. For medium-rare, it should read 130-135°F (54-57°C). Adjust cooking time as necessary for your preferred level of doneness.

  4. 6

    Rest the Steak

Remove the steaks from the heat and let them rest on a cutting board for at least 5 minutes to allow the juices to redistribute.

Optional Sides Preparation

  1. 7

    Prepare Asparagus

Trim the ends of the asparagus and toss with olive oil, salt, and pepper. Grill or roast alongside the steak for 10 minutes until tender.

  2. 8

    Cook Potatoes

Boil or roast the potatoes until fork-tender. Season with salt, pepper, and a bit of butter or olive oil before serving.
