Melt the Butter
In a small saucepan, melt the unsalted butter over low heat until fully melted and slightly bubbling. Remove from heat and set aside.

Prepare Egg Yolks
In a mixing bowl, whisk together the egg yolks, lemon juice, and salt until the mixture is pale and slightly thickened.

Cook the Sauce
Place a heatproof bowl over a saucepan of simmering water (double boiler method). Pour the egg yolk mixture into the bowl and whisk constantly. Gradually add the melted butter, a little at a time, while whisking continuously until the sauce thickens and doubles in volume.

Once the sauce has thickened, remove from heat. Add a pinch of cayenne pepper and adjust the seasoning with additional salt if desired.

Serve the Hollandaise sauce warm over poached eggs, vegetables, or your dish of choice.
