Method

Gumbo

    Prepare the Ingredients

    Dice the chicken thighs, slice the andouille sausage, and chop the onion, green bell pepper, celery, and garlic.

    Cook the Sausage

    In a large pot, heat the olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion, green bell pepper, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Chicken and Spices

    Add the diced chicken thighs to the pot along with the bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir well.

    Combine with Broth and Tomatoes

    Pour in the chicken broth and add the canned diced tomatoes. Bring to a boil.

    Simmer with Okra

    Once boiling, reduce the heat to low and add the sliced okra. Simmer for 30-40 minutes, stirring occasionally.

    Prepare Rice

    While the gumbo simmers, cook the rice according to package instructions.

    Serve

    Remove bay leaves from the gumbo before serving. Serve the gumbo over the cooked rice.

BLT Salad

    Combine Ingredients

    In a large salad bowl, combine the chopped lettuce, diced tomatoes, and crumbled bacon.

    Dress the Salad

    Add mayonnaise, salt, and black pepper to the salad. Toss gently to combine.

    Serve

    Serve the BLT salad immediately as a side with the gumbo.

Caesar Salad

    Combine Ingredients

    In a large salad bowl, combine the chopped romaine lettuce, grated Parmesan cheese, and croutons.

    Add Caesar dressing, salt, and black pepper to taste. Toss gently to combine.

    Serve the Caesar salad immediately as a side with the gumbo.
