Preparing the Duck Breast

    Score the Skin

    Using a sharp knife, carefully score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat.

    Season the Duck

    Rub the scored skin with sea salt and black pepper. Let the duck breasts sit at room temperature for 30 minutes.

Cooking the Duck

    Sear the Duck

    Place the duck breasts skin-side down in a cold cast-iron skillet. Turn the heat to medium-high and cook for about 6-8 minutes until the skin is golden brown and crispy.

    Flip and Cook

    Flip the duck breasts and cook for an additional 4-5 minutes until medium-rare. Remove from the skillet and let rest for 10 minutes.

Making the Sauce

    Sauté Shallots

    In the same skillet, add duck fat and heat over medium. Add chopped shallots and sauté until translucent.

    Deglaze with Wine

    Pour in the red wine and scrape up any brown bits from the bottom of the pan. Let it simmer until reduced by half.

    Add chicken stock to the pan and bring to a simmer. Reduce the sauce until it thickens slightly.

    Stir in butter and balsamic vinegar to finish the sauce. Season with salt and pepper to taste.

    Slice the duck breast thinly and arrange it on plates. Drizzle the sauce over the duck and garnish with fresh thyme.
