Method
Cooking the Étouffée

Prepare the Base
In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil and butter over medium heat until melted.

Add Garlic and Tomato Paste
Stir in the minced garlic and tomato paste. Cook for an additional 2-3 minutes, stirring frequently to prevent burning.

Add Crawfish and Seasonings
Add the crawfish tails, chicken broth, cayenne pepper, creole seasoning, salt, and black pepper. Stir well to combine.

Simmer
Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for about 20-30 minutes, stirring occasionally until the sauce thickens.

While the étouffée is simmering, prepare the steamed white rice according to package instructions.
