Method

Cooking the Étouffée

    Prepare the Base

    In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil and butter over medium heat until melted.

    Sauté the Vegetables

    Add the diced onion, green bell pepper, and celery (the 'trinity') to the pot. Sauté for about 5-7 minutes, or until the vegetables are soft and translucent.

    Add Garlic and Tomato Paste

    Stir in the minced garlic and tomato paste. Cook for an additional 2-3 minutes, stirring frequently to prevent burning.

    Add Crawfish and Seasonings

    Add the crawfish tails, chicken broth, cayenne pepper, creole seasoning, salt, and black pepper. Stir well to combine.

    Bring the mixture to a gentle simmer. Reduce the heat to low and let it cook for about 20-30 minutes, stirring occasionally until the sauce thickens.
