Crab Cakes Preparation

Mix Ingredients
In a large bowl, combine the jumbo lump crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, green onions, breadcrumbs, beaten egg, salt, and black pepper. Gently fold the ingredients together to avoid breaking up the crab meat.

Form Patties
Once the mixture is well combined, form it into patties (about 8-10 depending on your preferred size). Place them on a parchment-lined tray.

Chill
Cover the tray with plastic wrap and chill in the refrigerator for at least 30 minutes to help the patties hold their shape during cooking.

Cook Crab Cakes
In a large skillet, heat olive oil over medium-high heat. Once hot, add the crab cakes and cook for about 4-5 minutes on each side or until golden brown and crispy.

Prepare Asparagus
While the crab cakes are chilling, prepare the asparagus. Trim the ends of the asparagus spears and place them in a bowl.

Season Asparagus
Drizzle olive oil over the asparagus and sprinkle with salt and black pepper. Toss to coat evenly.

Grill Asparagus
Preheat a grill or grill pan over medium heat. Grill the asparagus for about 5-7 minutes, turning occasionally until tender and slightly charred.
Hollandaise Sauce Preparation

Melt Butter
In a small saucepan, melt the unsalted butter over low heat. Keep it warm but do not let it boil.

Whisk Egg Yolks
In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is pale and thick.

Create the Sauce
Place the bowl over a pot of simmering water (double boiler method). Gradually whisk in the melted butter until the sauce is thick and creamy. Season with salt and cayenne pepper if using.
Assembly

Plate the Dish
To serve, place 2-3 crab cakes on a plate alongside a portion of grilled asparagus. Drizzle with hollandaise sauce over the crab cakes and asparagus.
