Pork Chop Preparation

    Season the Pork Chops

    Pat the pork chops dry with paper towels. Season both sides with salt and black pepper.

    Sear the Pork Chops

    In a large skillet over medium-high heat, add olive oil. Once hot, add the pork chops and sear for about 3-4 minutes on each side until they are nicely browned.

    Add BBQ Sauce

    Brush BBQ sauce on one side of the pork chops. Flip them over and brush the other side. Reduce the heat to medium, cover, and cook for an additional 5-7 minutes, or until the internal temperature reaches 145°F (63°C).

    Rest the Pork Chops

    Remove the pork chops from the skillet and let them rest for about 5 minutes before serving.

Mashed Red Potatoes Preparation

    Boil the Potatoes

    Wash and cut the red potatoes into quarters. Place them in a large pot and cover with cold water. Bring to a boil over high heat, then reduce to a simmer and cook for about 15-20 minutes or until fork-tender.

    Once cooked, drain the potatoes and return them to the pot. Add butter, milk, garlic powder, salt, and black pepper.
