Prepare the Chicken

Season the Chicken
Pat the chicken breasts dry with paper towels. Rub the Cajun seasoning evenly over both sides of the chicken breasts.

Cook the Chicken
In a skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and cook for about 5-7 minutes on each side until they are blackened and cooked through (the internal temperature should reach 165°F or 74°C).

Melt the Cheese
In the last minute of cooking, place a slice of smoked provolone cheese on each chicken breast. Cover the skillet with a lid to help the cheese melt.

Prepare the Buns
Toast the sandwich buns in a toaster or on a skillet until golden brown.

Build the Sandwich
Spread 2 tablespoons of creole honey mustard on the bottom half of each toasted bun. Place the blackened chicken breast with melted cheese on top, followed by two slices of crispy bacon and a generous handful of onion straws. Top with the other half of the bun.
