Base Ingredients

Vegetable Mixture

Method

Cooking the Rice

  1. 1

    Rinse the Black Rice

Rinse 1 cup of black rice under cold water until the water runs clear to remove excess starch.

  2. 2

    Cook the Rice

In a medium saucepan, combine the rinsed black rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over high heat.

  3. 3

    Simmer

Once boiling, reduce the heat to low, cover, and let it simmer for about 30-35 minutes, or until the rice is tender and the water is absorbed.

  4. 4

    Fluff the Rice

Remove from heat and let it sit covered for 10 minutes. Then fluff the rice with a fork.

Preparing the Vegetable Mixture

  1. 5

    Heat the Olive Oil

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

  2. 6

    Sauté Garlic

Add 3 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant.

  3. 7

    Add Vegetables

Add 1 diced red bell pepper and 1 diced zucchini to the skillet. Sauté for 5-7 minutes, until the vegetables are tender.

  4. 8

    Add Spinach

Stir in 2 cups of chopped spinach and cook until wilted, about 2-3 minutes.

Finishing Touches

  1. 9

    Season the Mixture

Add 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of black sesame seeds to the vegetable mixture. Stir well to combine.

  2. 10

    Adjust Spice Level

Sprinkle chili flakes over the mixture to taste, stirring to incorporate.

  3. 11

    Combine with Rice

Serve the vegetable mixture over the fluffed black rice, or mix them together for a combined dish.
